
STUFFED PEPPERS AND ZUCCHINI
INGREDIENTS
250 gr of SOY +
2 large bell peppers (for 4 units)
4 zucchini cough
1 green onion
4 eggs
Soy sauce q/n
200 gr of cream cheese
PREPARATION
Hydrate the soybeans with water and let them sit for 20 minutes if the water is cold or 10 minutes if it is hot. Don't forget to drain them afterwards.
Wash the bell peppers, cut them in half and remove all the seeds.
Heat them in the microwave for 2 minutes to soften them.
Carefully scoop out the zucchini with a spoon and reserve the excess zucchini.
Chop and sauté the green onion. Add the previously drained soybeans and soy sauce.
Remove the mixture from the heat and add the remaining zucchini and the hard-boiled egg. Don't forget the seasonings.
Place all the filling inside the peppers and zucchini.
Top with cream cheese or fried eggs and bake for about 5 minutes.
