
vegetable meat empanadas
INGREDIENTS
250 gr of SOY +
2 bell peppers
3 onions
4 eggs
100 gr of olives
2 packages of empanada covers
Soy sauce q/n
Seed mix (optional)
Spices to taste: salt, black pepper, empanada seasoning
PREPARATION
Hydrate the soybeans with water and let them sit for 20 minutes if the water is cold or 10 minutes if it is hot water.
While you wait for the soy to hydrate, chop the onions and bell peppers and sauté them in a pan.
Add the already hydrated soybeans and the soy sauce. Add the seasonings to the cooking.
Once removed from the heat, add the hard-boiled eggs and olives.
Pour the mixture into the empanada shell and brush the empanadas with egg. If you want, you can include a seed mix to put on top of the empanadas.
Finish cooking in the oven or however you prefer.
