INGREDIENTS
100 grams of SOY + textured soy
200 cc of vegetable broth
4 large potatoes
1 red bell pepper
2 onions
Cheese of choice
Oregano
Salt and pepper
Nutmeg
Procedure
Hydration of soybeans
First, the textured soy must be hydrated so that it acquires a moist texture similar to minced meat. In a large container, place the 100 grams of SOY + together with 200 cc of vegetable broth, taking into account that the vegetable broth doubles in size. The hydration process takes approximately 20 minutes. Stir and squeeze to remove excess water.
Preparation
Chop the onions and bell pepper and sauté in oil. Once the soy is hydrated, add it to the preparation in the pan and season to taste while sautéing the preparation for a few more minutes.
Cut the pumpkin in half and remove the seeds. Place the two halves in a bowl and fill with the soy mixture. Grate the cheese and add the amount you like.
Place in a hot oven until golden.
